So at the beginning of the year I was all “I need to get motivated so that I can get my sassy pants back on (like, pronto!) so that I can be that confident woman in heels (or Birkenstocks, whatever tickles my fancy for the day) sauntering down my local high street with careless, fun-loving abandon and loving every second of my life”, which obviously leads me to buying a whole new Nike wardrobe… You know….because THAT is going to be the one thing to kick start my “motivational manifesto” year!

So here’s me all decked out in black Nike spandex, doing squats like my life depended on it, left leg forward, right leg forward, both legs and barely 1 minute into it my butt and quads start to burn and sweat starts to pour.  Realizing quickly that I am far from military squadron fitness, I take a sip of water and a small “timeout” by having a chat with the personal trainer on all good things for the weekend, ensuring I avoid any conversation on squats like the plague!  Soon, my one hour workout became a 1 minute workout and 59 minutes socialising and my motivational manifesto on becoming a hot chick ninja quickly turned into a “moti-not-so manifesto”.

Right, I needed some serious butt kicking.

And for a foodie like myself, one way to get me really back on track is to know what is there waiting for me at the end – delicious food!  So bring on these to die for Hemp Protein Bars from mindbodybowl.co.uk.  I will seriously squat, push up and crunch like Superwoman knowing that at the end of it all I can delve into one of these baby’s.  Now, mind you.  As I tell this story I am at home munching away one of these already because I kept walking up and down past the fridge and I finally gave into temptation.  But….BUT I tell you, I did a few yoga poses and stretches at home this morning and I am counting that as a full out workout!!

These are super easy, barely taking 15 minutes to whip up and only take 20minutes to set in the fridge.  YAY!!

RECIPE:

250g medjool dates

200g of almonds

1 tbsp Tahini

60g Hemp Protein Powder

1/2 cup shredded coconut

1 tbsp Rice Malt Syrup

(*Note – The original recipe was for 200g dates, but I decided to use the whole 250g packet plus I added in the Rice Malt Syrup.  The combination of the both worked well as it made the mixture a little more sticky than usual, so it does not crumble.  And as I LOVE LOVE LOVE coconut, I added in also shredded coconut)

1/ Whizz the almonds in the food processor until they form tiny crumbles.  Ensure not to do this for too long otherwise it will turn into a flour consistency

2/ Add everything else into the food processor with the almonds and blend together.

3/ Line a small 20cm baking tray with baking paper.  Pour the mixture into the baking tray and then flatten out with a spatula.  This should be packed all nice and tightly.  Sprinkle a little more shredded coconut ontop

4/ Place it in the fridge for 20 minutes and then you are done!

5/ Once cut, it is best to wrap each piece with baking paper to avoid sticking together when you keep them in the fridge.

I gotta say, these Hemp Protein Bars are certainly going to help me get results, like movie style hot chick ninja results. And not only will I be “deliriously happy and healthy”, but also strong. Like “I challenge you Vin Diesel, yes you, to an arm wrestling contest, “any day-any way” strong!!”
