We all know that feeling of the afternoon slump at work, where boredom can set in, energy levels drop and we reach out for what can give us the quickest hit to get our energy levels back up so that we stop ourselves from falling asleep on our keyboards!  Now, we can push aside the sugar and caffeine hit and grab a piece of this nutritious gluten free banana bread!  Delicious and satisfying, it’s fab for an afternoon snack (or breakfast!) and it keeps your energy levels steady as it is filled with magnesium from the bananas , nuts and coconut.  As it contains ground almonds and flaxseed, it is free from glutenous flour – yipee!!

INGREDIENTS:

3 Ripre Bananas

30g Organic Butter at room temp

2tbsp Organic Maple Syrup

1 tsp ground cinnamon

1 tsp vanilla extract

3 large eggs

1/2 tsp bicarbonate soda

1tbsp lemon juice

220g ground almonds

30g Ground flaxseed (also known as linseed)

2tbsp grated coconut

2tbsp pumpkin seeds

a handful of crushed walnuts

Sea salt to taste

Coconut oil for greasing

METHOD:

1/ Preheat the oven to 170 deg C.  Grease a 23 x 13 cm with coconut oil

2/ In a blender, mix 2 of  the bananas, butter, maple syrup, cinnamon, vanilla, eggs, bicarbonate of soda, lemon juice and a pinch of sea salt.

3/ Add the ground almonds and ground flaxseed and blitz again in the blender

4/ Pour the mixture into a mixing bowl and fold in the coconut, seeds and walnuts.

5/ Thinly slice the remaining banana and fold that through the mixture too

6/  Pour the mixture into the prepared tin and sprinkle with flaxseed and pumpkin seeds.  Bake for approximately 1 hour.  After the first 30 min, cover the bread with baking parchment paper until it has finished baking

7/  Remove from the oven and let it cool.  Serve warm or at room temperature with some organic nut butter
