Breakfast, I NEVER skip it, and neither should you! Breakfast will get you started and fueled up for a fresh new day, therefore it is the most important meal of your day… Also, let’s be honest, food as the first thing on the agenda is not a shabby start anyway, especially when this comes in the form of a pancake! I bake one every day for myself, and I would like to share my healthy (low on fat, high on protein and deliciousness) and easy (only 4 main ingredients) pancake recipe with you. OK, here we go:

Pancake ingredients:

  • 1 whole egg & 2 egg whites
  • 60 grams oatmeal flour
  • glass of water
  • pinch of salt
  • Coconut oil or cooking spray (to bake)

Pancake recipe:

  1. Get yourself a big bowl and a whisk (or spoon), and put in the 60 grams of oatmeal flour.
  2. Mix one whole egg and two egg whites through the flour, and add a pinch of salt.
  3. Stir this mass until it becomes a sticky dough, and make sure all lumps are stirred out as much as possible.
  4. Add the water and stir it until it becomes a fluid pancake dough. Add even more water if necessary, just until you have the desired fluid consistency.
  5. Heat up a pan on medium heat, and put in some cooking spray or coconut oil to make sure the pancake won’t stick.
  6. If the pan has heated up for 1-2 minutes you can poor in the dough. Wait (approximately 5 minutes) until the top of the pancake has set. If so, turn the pancake, and bake the other side for about 3 more minutes.
  7. Done! Put the pancake on a plate and add some delicious toppings. Here are my favorites (note: not all used at the same time):

Strawberry PancakeToppings:

  • Berries: In all forms and sizes (strawberries, blueberries, raspberries, blackberries). Especially in the summertime these fruits are on season and at their best.
  • Banana: I eat this fruit almost every day with my pancake. Because banana is very sweet, and will give you a nice energy shot, I think it’s a great companion for the pancake.
  • Apple: Especially the Granny Smith apple is one of my favorite toppings. Cut them in little pieces and add a little bit of honey if you feel like you need that little extra.
  • Fake “whipped cream”: Of course cream is not very healthy, and that’s why they invented Greek yogurt! Just add some protein powder to the yogurt (I use vanilla flavor) and stir it through to get a healthy fake “whipped cream” to enjoy on your pancake. I sometimes combine this with the fruit I already mentioned above, to get rid of my sweet tooth cravings and have some extra protein.

Pancake variation ideas:Banana Pancake

  • Cinnamon: Add some cinnamon to the pancake dough to get a nice apple pie smell and taste. Use the apple topping to complete this experience.
  • Instant coffee powder: add some instant coffee powder for that extra kick, and comforting coffee taste in the pancake.
