I simply love spring mornings.  That crisp freshness while the sun beams down on my face and the gentle wind that blows through my hair.  And then sitting down to a nourishing breakfast that gives me a kick start of energy for the day. But this is the hard part…

When you are done and dusted with having eggs and spinach for breakfast for the 100th time, what can you have that is quick, tasty and doesn’t have you reaching for the processed, sugar laced box of cereal that gives you a sugar slump?

(that you thought was healthy until you saw the arm’s length of ingredients on the side of the box!)

Muesli?? Meh. It lacks so much excitement…

Then I stumbled upon this orange and coconut granola from Annie at mindbodybowl and it is simply divine!!!  The orange and coconut combination gives it this fresh, zesty, summery taste and it has the right amount of sweetness to it (I used raw honey but you can also use maple syrup).  And it has crunch!!  I love a breakfast with a good, loud crunchiness to it (makes me feel like I am really eating something!).  The macadamia nuts are the perfect addition as they are not only gluten free but also packed with nutrients, antioxidants and minerals such as calcium, iron and magnesium.  So this granola is perfect for me as an after workout breakky!

It is quick, simple, smells divine when baking it (the orange zest really comes out!) and I have a whole jar that will last me for almost 2 weeks (well…hopefully!  As I also love to munch on handfuls of this granola in the afternoon so it might not last so long around me!!) .  And it is packed with goodness and gives an abundance of energy all morning! Serve it up with your favourite yogurt or plant milk.  I myself love it with coconut yogurt.

Ingredients:

180g/2 cups jumbo oats

200g/1 and 1/2 cup macadamia nuts, roughly chopped

80g/1 cup desiccated coconut

2 tablespoons of chia seeds

1 large orange

2 tablespoons of coconut oil (melted)

1 teaspoon of vanilla bean powder

120ml/1/2 a cup of honey or maple syrup

a pinch of sea salt

Directions:

Preheat the oven to 180°C and line a baking tray with baking paper. Grate the orange and place the zest to one side, then juice the orange and keep them separately.

In a large bowl, add all of the dry ingredients (oats, macadamias, coconut, chia, orange zest, salt, vanilla bean powder) and stir to combine.

Add in coconut oil, orange juice, honey/maple syrup and stir thoroughly.

Spread the mixture evenly onto the lined baking tray and bake for approximately 15 minutes, stir and bake for 15 minutes again (this was enough for me, but you may want to leave it in the oven a little longer if you want it crunchier).
